2022年12月23日 · If you sear the meat before smoking, it won’t pick up much smoke flavor. Smoke will only penetrate the meat while it’s surface is cool. After a few hours in low temp smoke it doesn’t pick up much more smoke flavor, so searing at the end makes more sense. For a prime rib roast I don’t sear it heavily.

They're from the same part of the animal (primal cut), but different cuts. A "rib roast" is boneless and a "prime rib" is bone-on still. Or put another way: a rib roast is a boneless prime rib. Lots of parts of animals have different names for different cuts of the same part.

2023年12月24日 · I’m looking to smoke a prime rib roast tomorrow and time it so it’s being pulled off the smoker 30 minutes before dinner. I plan on smoking it at 225° until it’s 120° internal then searing it with a grill gun. It’s 17lbs but I’ll probably cut a few steaks off it. Thanks for any advice.
