2023年11月14日 · Smoked a turkey this weekend. Dry brined it for 24 hrs. Obviously spatchcocked. The turkey was organically ‘roided up weighing in at a whopping 21lbs. Anyhoo, I injected it with garlic and herb infused chicken schmaltz and butter. Final product was was fantastic but I don’t think the injection did anything for flavor.
