2005年2月11日 · I stumbled onto this thread and may be of some help. First, I am not sure where this "fresh" andouille business is coming from. I never heard of such a thing. For as long as I have been cooking Cajun, andouille, by definition, is a smoked sausage. That is what is being referred to when you come across it in Cajun recipes.

The key to cajun andouille (besides seasonings and smoking) is the rather coarse textured meat. I'd hand chop some dark-meat turkey and coarsely grind a mix of white & dark meat to use in the sausages.

2005年6月6日 · It's hard not to eat the pork that Peter raises. The sausage we have made is without casings. Basically just ground pork, salt, pepper and sugar. Lean enough you add a little oil to the pan to get started, then usually we fry patties of it and eat it like hamburgers. Of course Pete picks the best hogs for his and our use.
