2009年8月20日 · The best to me is a 10 lb flathead for a good courtboullion (cajun dish)..Because the flathead eats primarily live bait it tends to make the meat sweeter and less oily tasting..A good 10 lb fish makes a perfect size pot for the family + leftovers..As far as fried I like under 5 lb channels.. 2009年7月1日 · Catfish! To me it's one of the best tasting fish there is. Flathead Catfish is the cat's meow to me. Clean, fresh taste. Not fishy at all. Has a firm texture with a nice white meat. Channel Cat> get the yellow back fat trim off, bleed the cat out by cutting it's tail off and your left with some nice tasting fillets fit for a KING!!

14 posts · Joined 2008. #13 · Mar 22, 2008. If I want catfish to eat, I usually go to my Grandpa's pond and catch the little channel's (pan size ones). Farm raised cats taste better to me. Never ate blues or flats just the 1-3 pound farm raised channel catfish for me.

I prefer either over a channel cat....although I certainly will still eat a channel cat too. The key to cleaning and eating a larger flat is to rid the fillet of the red streaks or mud streak as it is also known.
