Beautiful fish. Local. Sustainable and a rare treat. We butchered this yellow fin tuna loin into a bite for an event @maunalaniauberge last night and used all of the quarter panel. Bloodline was marinated and grilled for kitchen snacks, sinewy lower muscles were ground for tuna burgers… what’s your favorite fish? Btw, the bite from that center was glorious.
